Medical Definition of Egg-white injury

1. Dermatitis, loss of hair, and loss of muscle coordination, produced in rats by diets containing large amounts of raw egg white, the avidin of which combines with biotin producing a deficiency of the latter. Synonym: egg-white injury. (05 Mar 2000)
