Medical Definition of Glycation

1. The uncontrolled, non-enzymatic reaction of sugars with proteins. Chemical glycation is also very important in the damage done to diabetics when their sugar levels rise above normal, and in damage done to critical proteins of long-lived nerve cells in aging. (14 Nov 1997)
